With the exception of desserts, I don’t buy many prepared foods. Turns out that may be a mistake.
The Food section recently had the pleasure of tasting dishes from Demeter’s Pantry, a Silver Spring wholesaler of Greek food. Maria Kardamaki Robertson, who grew up on Crete in the 1970s, makes dishes including moussaka, boureki, vegetable stews and salads that are sold in the prepared foods case at area Whole Foods Markets. They are sold under the Greek Table label at Roots Market and at the Takoma Park Silver Spring Co-op.

Setting the table: Greek food business hits new store shelves

Maria Kardamaki Robertson launched The Greek Table in 2008. Her product line is now being sold in Whole Foods and Costco.  Maria Kardamaki Robertson’s prepared food business is a study in patience and evolution. A native of the Greek island of Crete, Robertson launched Demeter’s Pantry in 2003 in Boston as an importer of Greek artisanal and organic cuisines. A decade later, now based in Silver Spring, she is an exporter of fresh, Greek meals — to local stores.

Imagine entering your neighborhood grocery store and heading over to the apples. Of the half-dozen varieties on display, imagine that four are grown in orchards you’re familiar with or by people whose names you recognize. And as you push your cart through the aisles, you find products manufactured in Maryland on every shelf. ……. Robertson’s Greek Table product line, which features about 20 packaged meals made with natural ingredients, has been available at Whole Foods and other natural or specialty grocers in the mid-Atlantic since 2008. But this past fall, her products caught the attention of a much larger customer: Costco, the national warehouse retailer.  The company recently ramped up its initiative to stock more locally made products on Costco shelves nationwide. Regional buyers look for items made in their area to be offered in select stores for a “trial period” of several months, Robertson said. If a product does well, Costco officials might opt to carry the item year-round in stores in the rest of NE or nationwide, representing significant growth potential for small businesses. To satisfy Costco’s size requirement, Robertson created 2-pound packages of three varieties of her prepared meals, which can be found throughout the local region, including in Maryland. Robertson is still waiting to hear the verdict on her sales figures, but she said numbers look promising so far. Even if her products don’t move beyond regional stores, Robertson said the opportunity with Costco helped her get her feet wet in the wholesale market, similar to Wegmans’ certification program for farmers.

Maria Kardamaki Robertson has eight weeks to prove herself.
Robertson, founder of Demeter’s Pantry, got a big break last month when Costco tapped her line of packaged Greek meals for a two-month trial run at five of its regional stores.
“This was a rare opportunity to have daily conversations with people and get a lot of feedback,” said Robertson, who lives in Silver Spring, and currently sells meals to area Whole Foods, Balducci’s and Roots Market stores. “As a wholesale company, you’re kind of isolated from your customers.”
